Tasty Tuesday - Low Carb Cream of Cauliflower Soup

Bacon & Cheese Cream of Cauliflower Soup

1 tablespoon butter
1 onion, roughly chopped
1 teaspoon salt
2 cloves garlic, chopped
1 head cauliflower, chopped
2 cups chicken or vegetable broth
1/2 teaspoon ground pepper
1/4 teaspoon ground nutmeg
4 slices cooked bacon
1 cup grated cheddar cheese (or your favorite cheese)
1 cup milk
1 cup cream (heavy or 1/2 & 1/2)
2 tablespoons fresh parsley, chopped

In a large pot saute onions in butter and salt for about 5 minutes just until soft and slightly creamy looking.  Add garlic and saute one minute longer. Pour in broth and add cauliflower.  Put a lid on the pot and bring to a boil.  Turn down heat to a fast simmer and let it cook for 10 minutes or until cauliflower is soft.  

Remove from heat, add pepper, nutmeg, 2 slices bacon, milk & cream.  Puree with hand blender or in food processor.   Return to pot and reheat stir in 3/4 cup of cheese and stir until melted and well blended.

Ladle soup into serving bowls. Top each bowl with a bit of remaining grated cheese, crumbled bacon and parsley.

This soup is so good.  Especially on a cool night.  Serve with a side salad for a complete meal.

This soup make 4 large servings or 6 small.  It's about 10g of usable carbs for the large serving and 8.6g for a small.  Not so bad and doesn't raise the blood sugar!
